Yesterday I met a Padang’s guy that was selling trousers. (“Padang” means either a tribe and a city in West Sumatra, the origin of Padang’s food, including rendang).
When I found his language indicating Minang/Padang tribe, I guess about him “so you are good at cooking rendang then”. And then he explained the ‘secret’ about cooking process of ‘original rendang’. At least he informed: 1. It is cooked with wood’s fire, not modern cooking equipments. 2. Its color is darker. 3. It’s drier than usual rendang. 4. The coconut is original from West Sumatra. 5. It is cooked for 4 hours so as to bring out the coconut taste as well as the meat’s (beef).
Yes, in Jakarta, or other places in Indonesia, padang restaurants are everywhere, easy to find one, but…. the original rendang is a different story, it’s so rare.
I still remember tens years ago when I ate the original rendang. The sensation was …. ‘WOW’. 😄
